Linzer Thumbprints

1/2 cup shortening (Spectrum)
1/2 cup butter ( Earth Balance DF/SF)
2/3 cup powdered sugar
1 large egg
2 teaspoons almond extract
1/3 cup ground almonds
2 cups GF flour blend
1/4 teaspoon xanthan gum
1/2 teaspoon salt

Preaheat oven to 350.
Cream shortening, butter, sugar, egg, and almond extract until fluffy.
Add ground almonds, GF flour mix, xanthan gum, and salt.
Mix until blended.
Roll dough into 1" balls and place on a a parchment paper lined cookie sheet.
Indent each ball in the middle with your thumb.
Bake 20 minutes and take out of oven and add 1/2 teaspoon of jelly preserves of your choice.
Return to oven another 5 minutes.
Take out of oven and cool.
