If you tested by enterolab to have a reaction to white potatoes, does that mean that you CAN have red potatoes? You know, the ones with red skins...
Also, is quinoa GF?

Well, it doesn't necessarily mean that red potatoes are safe for you, but it definitely does not rule them out, either. There is a very good chance that you might be able to safely eat them. Please check out posts number 7 and 8 in this thread.
Post number 8 in that thread also contains a link to a previous thread that contains a lot of information of starch characteristics (pertaining to digestibility).
Quinoa is gluten-free. Unfortunately, though, much of the quinoa available in stores has been discovered to be cross-contaminated with barley. This article explains why, and lists a couple of brands that have been verified to be safe.
