Received my Enterolab results today which I've already passed on to Tex to add to the list. The only sensitivities that showed up were gluten and oats. Tex suggested I could have selective IgA deficiency so I plan to get tested for that. I know I react to several foods that didn't show up in these results.
Fecal Anti-gliadin IgA 12 Units (Normal Range is less than 10 Units)
Fecal Anti-casein (cow’s milk) IgA 5 Units (Normal Range is less than 10 Units)
Fecal Anti-ovalbumin (chicken egg) IgA 3 Units (Normal Range is less than 10 Units)
Fecal Anti-soy IgA 3 Units (Normal Range is less than 10 Units)
Mean Value 11 Antigenic Foods 4 Units (Normal Range is less than 10 Units)
While all of the foods tested can be immune-stimulating, the hierarchy of reactions detected were as follows:
Food toward which you displayed most immunologic reactivity: Oat
Food for which there was no significant immunologic reactivity: Rice, Beef, Corn, Chicken, Tuna, Almond, Walnut, Cashew, Pork, White potato
Within each class of foods to which you displayed multiple reactions, the hierarchy of those reactions detected were as follows:

Sounds like you have lots of options. I wonder if the Elisa blood tests would cover the selective IgA deficiency testing that Tex suggested. Elisa testing would be covered by insurance.
Resolved MC symptoms successfully w/L-Glutamine, Probiotics and Vitamins, GF since 8/'09. DX w/MC 10/'09.
I'm not sure how sensitive the tests used to determine selective IgA deficiency might be. Obviously Leslie does produce some level of immunoglobulin A, but her production level may be below normal. If it is, then both the blood tests and the stool tests will be biased toward false negative results for all food sensitivities except for the ones that are the most reactive for her.

Tex, I think the Elisa Blood Panel tests have been greatly improved. It picked up GS, all beans including soy and also yeast when my husband had them done fairly recently. Not sure if you were responding to me, was suggesting it in lieu of Enterolab as a place to start, as it's covered by western med ins.
