Awesome Gluten Free/Dairy Free Chicken Nugget Recipe

Hey everyone I just wanted to come on and share an awesome recipe I found for Gluten free/Dairy free chicken nuggets. I found it online and have made it one day out of the week for the last 4 weeks for my family. I REALLY enjoy this recipe because to me it feels like a 'normal' dinner to have vs feeling 'left out' that I have to eat so different from my family/friends.

Chex Chicken Nuggets

1lb boneless skinless chicken breasts
4 cups plain Chex cereal
2 tablespoons of Silk or any form of safe almond 'milk'
2 teaspoons of paprika
1 teaspoon of garlic powder


#1 - Preheat oven to 350 degrees

#2 - Crush Chex in bowl or bag - which ever works for you.
#3 - Mix seasoning in with the Chex
#4 - Pour almond milk mixture into seperate shallow bowl
#5 - Cut up chicken breasts into small cubes about 1-2 inches in size
#6 - Dip and coat raw chicken in the almond milk mixture
#7 - Coat the recently dipped chicken in the Chex mixture , making sure to press and fully cover the chicken with the mixture
#8- Place chicken nuggets on a foil lined baking sheet
#9 - Bake for 20-30 minutes (depending on your oven, I do the full 30min) make sure to turn the chicken half way through the baking time to allow both sides to get equally crispy.


And Ta-Da! A healthy and MC/LC friendly version of chicken nuggets! :grin:
Also I'd like to note that you can omit or substitute the spices listed above - since everyone of us has different things we can tolerate. Personally I don't feel like removing the paprika and garlic powder would make much of a difference to the quality of the recipe, I really don't even taste them - the Chex is the only thing I notice (which I love because of the texture it creates)
It can be served with rice, potatoes, vegetables etc as a side - whatever makes your tummy happy!
My boyfriend and son love dipping them in different sauces. I usually stick to ketchup and or mustard as this is what my stomach tolerates well :)

This sounds really good, a welcome change from the plain chicken breasts I've been eating. Looks pretty fast and easy too! I like that. Thanks for sharing.

Thanks. I make a similar recipe using either crushed corn flakes or corn chex. I use chicken tenders and I also use egg with the almond milk. More spices because I can now tolerate them. If I really want the coating to stick I'll go through the step of also using GF flour (flour-egg-crumbs) Yum. They are good to make for a party appetizer !

If you aren't sensitive to corn, and don't mind frying rather than baking, dredging chicken tenders in cornstarch gives a very nice crisp coating.

You're right Martha. I use seasoned cornstarch when I stir fry Chicken.
