Oh, Polly -

I just read your news about Wayne going into surgery with a blocked Sigmoid. I am worried about him; I know it had to have been very bad for him to choose surgery. Please, keep us updated when you hear from him or his brother. According to what I can deduct from your message on the main board he had the surgery last night, right?

Karen,

The safe Hellmann's is the regular (not the lite), although it does have soybean oil in it. I seem to tolerate it OK. Of course, I use small amounts.

Karen,

Tell your inlaws that chefs from all the fancy restaurants in Paris were visiting areas where catfish farming was/is big in the USA, starting about in the late 80's or so (I think?) so that they could learn to prepare it "properly" in their exclusive restaurants.

Catfish is still catfish here, but some of the other fish species that you see at higher end stores nowadays have been renamed from less glamorous names (formerly considered less desirable fish to eat) to more "acceptable" names, and people buy em up at fairly high prices, never realizing what the fish reallly are. These are some fish names you'd readily recognize, but at the moment, I can't recall a single one of them to use as an example. Perhaps some of you could come up with one or two to illustrate what I'm talking about.

I'm spoiled now for the Pacific Northwest WILD salmon!! Yum!

Lucy, I think I know what you mean - I just don't know the names of any of the other fish you mentioned. Catfish is fairly pricy here now too - about the same as farm raised salmon. Go figure.

Polly, I appreciate the name of the Hellman's Mayo. I am going to buy a jar and take a brake from being a caveman every now and then. Some deviled eggs like Shirley suggested sound good and I am going to try some mayo on my mashed cauliflower as per your recommendation.

Wondering about Wayne - he should be in recovery now.
