Can you melt Coconut Oil in MW?

I just read this article about coconut oil, and towards the end of the article, it states never to melt coconut oil in MW, due to molecular composition changes. That is how I melt it, so does anyone know if melting it that way is so bad?

It wouldn't surprise me if microwaving alters the healthy fatty acids in some way. That said, I melted some today in the MV for a recipe I was making up -- another attempt at making baked bars using juicer pulp.
And it was another success! But I do not recommend this for MCers with active D. I'm on steroids and enjoying non-stop fiber while i still can!
Organic carrot and beet pulp mixed with coconut shreds, almond butter, raisins, coconut milk, GF oats, sorghum flour, maple syrup, coconut sugar, vanilla, cinnamon and coconut oil. Baked for an hour and it was still too moist but yummy! I'm headed to the fridge for more!

What is the best source of G-F oatmeal? I'm trying Bobs Red Mill, as the oatmeal is grown in an oat field away from wheat. I thought with some dried fruit thrown in, it might "loosen" things up for me. Short of a stick of dynamite, that is. :-)
I've been trying potatoes lately as well and I am not sure that they are not the cause of my pain and fatigue. I am hoping that today or tomorrow I'll hear from my gastroenterologist and can get started in the Enterolab testing!

Jean, I waited about 6 months to try popcorn. I started with a cup ( popped) and seemed fine with it. Now I can eat about 3 cups. I think I am past the fiber issue. I can eat beans and salad. My last issue is fruit. I just don't do well with fructose :(
Jane, I know what you mean about potatoes. I waited 6 months to try then again. I have a feeling that nightshades aren't the best, but I am now able to eat potatoes. This week I am testing tomato sauce for the first time in a year. I know that fresh tomatoes don't work for me....... we'll see.

How do you know if fructose is a problem? I wondered about that for some time now, as I eat lots of fruit, particularly, bananas and apples (although, I peel the apples and nuke them a little. Is there a test of some kind, hopefully, online. My family doctor, I'm sure, wouldn't approve any test for fructose. I barely just get a basic thyroid test. I would love to find an alternative practitioner around here.

Wikipedia has an excellent explanation of frucose malabsorption and what fruits and foods cause problems. It's not all fruit, just those with a higher fructose to glucose ratio, so your bananas appear safe. Apples are a problem. The test is a hydrogen breath test - the same one done for SIBO and lactose intolerance, just with a different drink beforehard. Most GI docs can do it in their office.

Excellent article, Zizzle, a real eye-opener for me. After reading it, I now believe that fruit is contributing to my problem, and I was shocked at Agave Nectar. I recently bought some and thought it a good thing. Always, fruit was innocent in my mind. I think, maybe, an apple a day does not keep the doctor away!
