I already posted about my egg experience on another topic (going more)...but here's an easy way for you to make Mexican rice. Believe me it is the easiest way you can make it and I damn guarantee you that you gonna make it a staple. I like Jasmine rice. (allow me to toot my horn, I am known as the queen of rice in my neck of the woods :-)
Sautee 1/2 onion in olive oil
Add 1/2 c rice, 1 cup water
Add 2 tblsp salsa ( I prefer the chunky kind)
Add a generous sprinkle of paprika
Add a generous sprinkle of cumin
(optional) 1/2 c canned garbanzo beans (Bush brand or Hanover, NOT walmart) rinsed well.
Bring to boil, cover and lower flame to smallest setting. Clock 25 minutes.
If you don't like it, sue me for claiming to be the Queen of Rice

I bought a small $14 rice cooker 15 years ago and it's still going strong. I love it! It shuts off when the weight of the rice and water goes down, raising the bucket the rice cooks in. Genius. No Fancy thermostats or electronics required!

Thanks, that looks good to me. I need to pick up some salsa first, so I'll give it a try later in the week.
The one-horse towns around here don't stock Jasmine rice, so I'm hoping that ordinary white rice will work.

Long grain rice should do, not the pre-boiled stuff, just regular uncooked long grain. I buy mild salsa since I cannot handle the hot stuff.

Good, that's the type of rice that I have on hand. That might be a good suggestion on the salsa, too, or maybe I'll try a medium. I've always bought the hot version (or extra hot Rotel), but it may be time to tone that down a bit, to try to save what's left of my gut.

Wow, you brave for eating the hot one. Yeah, tone it down, way down! Even the mild one is too hot for me...If I eat any of that stuff, I have to have the firefighters on speed dial!
