Monique....hope you are feeling better today!

Well, I ate once again some leftover fajitas. I felt a little nauseous yesterday for like 30 minutes before dinner but was okay eating dinner. Sometimes with me, if I get a little nauseous it will go away during a meal. Weird. So a couple of hours after dinner, I had some lower abdominal pains (very mild)....not used to getting those as I always had mid to upper abdominal pain. I just knew D was imminent and I was getting ready to pop 2 Peptos. (Didn't have to though) Slight pain went away around midnight....another night with only 5 hours of sleep. SO ALL FAJITA MEAT AND GF FLOUR TORTILLAS ARE NOW IN THE GARBAGE!!! Looks like maybe the coconut milk ice cream was not the culprit. Unless, my stomach just wasn't up for any kind of food yesterday and that's what I get for eating. But luckily no D! And gas had gone away the evening before. I have an Amy's GF/DF pizza in my freezer (not soy free). I'm sure I will break down and test that out soon as it was expensive and I will not let it go to waste. Hopefully will just be a mild reaction like what I had yesterday.

On a good note, I haven't had D since the first week in September and I haven't thrown up since February of 1990. Tru dat! lol!

Terri,

I tried the coconut ice cream (and it IS delicious) when I was only a few months into this disease. I did not react well to it at all! I thought it was the additive, carrageenan, but when the digestive tract is so irritated, I just can't say what may have caused the reactions I had. I have stayed away from 'ice creams' since.

I don't do well with fajita's either....maybe the spices have gluten? I used Penzey's (my favorite), but they don't have a gluten free stamp on their products. So, I've backed away from them and use fresh herbs as much as possible.

I have done better with Leah's suggestions for me.....bland, low fiber, very limited fruit (cooked), few carbs....so it's just meats & very well cooked veggies.....some rice chex & almond milk or almond flour bread & almond butter for snacks...it's so boring, but I've had the best results since this all started last August. I'm not fixed, and there are days where the mucus is back, but it is nothing like I have been experiencing for 7 months!

Hang in there 7, it takes time, but it's good news that you are feeling better.

Terri, sometimes leftovers can cause problems because histamines rise as cooked food gets older, but for me, peppers would have been troublesome. I still stay away from them. If you make fajitas again, omit the peppers and only use pure corn tortillas. Also, Avocado makes everything mexican taste better :)

Thanks, Terri. I am better today, but weak from lack of energy. Eating all soft foods and juicing mostly until this phase passes. I noticed from past experience that it takes me a week to recover from a flare (minimum) now that I have figured out this condition (somewhat). I am like Dubois here in terms of diet...

Monique...I understand your fatigue after a flare up....before I was diagnosed (and for 28 years) I taught K-1-2 children! I never stopped moving! So, to have the tiredness that I've experienced for the past 1/2 year has been so frustrating for me. I feel like a blob!

PATIENCE is a virtue, I keep telling myself! :thumbsup:

@7....I don't think there was carrageenan in my ice cream...wasn't on the list of ingredients. I hope I don't react to coconut or I will just shoot myself. I'm healing well and can tolerate a lot more foods now but something got me. I've waited a long time to add foods in..about 7 months. Doing well today. Keep up your diet....I ate pretty much the same for quite some time. I'm like Leah now and can add in foods and see what happens. I don't expect to handle every new thing I test. This was my first reaction and it was very mild.

My marinade is made up of the following: Distilled white vinegar, worchestershire sauce (GF), Soy sauce (Kroger brand is GF), Italian dressing mix (GF), Smart Balance Oil (got dang soybean oil in it) and raw honey. So no gluten at all. Too much soy sauce in it though...10 oz bottle...ugh.

@Leah...don't do peppers on my fajitias...it was just chicken and avocado. I haven't braved a pepper in ages. I think I learned that from you. Won't even attempt chopped onion on my fajita either. I do well with leftovers....that's all I eat! So it's probably not that. I'm a leftover freak! lol!

@Monique....so a week huh? Hope you are back to normal soon. I'm feeling much better today. Starving!

Dubois----patience is indeed a virtue...and when I get sick I am not hard on myself. I've learned that lesson with 40 years of diabetes ;-)

Terri---thanks for the encouragement. I wrote a new post today (single, white female seeking...) which you'd appreciate and should cheer you up :lol: Thank God for humor, I'd be dead without it!

Terri..I agree about coconut...if I had to give that up, you could shoot me, too! :) My little sweet is a macaroon or maybe a homemade almond flour cookie, or a rice krispie treat, and that's it....and Easter is coming...but I made it through Christmas without a single one of mom's many traditional treats, so I'll make it through this!

I can't use soy sauce because of the soy...could it be that? It's tough for me because I love to use spices in my food....but not anymore.

The SO Delicious coconut ice cream has guar gum as an ingredient. Through a process of elimination, I learned that guar gum is what was causing me problems when I tried coconut ice cream. There are NO ice creams that I could find, that did not either have soy, gluten or guar gum as an ingredient. I bought an ice cream machine and made my own for a while. After trying a couple of recipes, I retired the ice cream machine and just gave up. Once every 6 months or so I eat real honest-to-goodness ice cream and don't experience much discomfort. I also gave up on commercial GF pizza. It just didn't taste very good and there was always some reaction after eating.

For me, a modified paleo diet works well. It took me a couple of years struggling with trying to eat like I used to but with GF, SF, DF, EF ingredients and finally giving up. Too much risk for too little reward.

I trust you are aware that regular Rice Krispies are made with barley malt that is a source of gluten that sneaks in under the FALCPA labeling law, because Congress doesn't know beans about gluten. IOW, malt does not have to be pointed out on the label as a source of gluten (because of a loophole in the law), but it is indeed a prime source of gluten.

Kellogg's does make a gluten-free version of Rice Krispies, though, made with brown rice (without the malt).

I'm guessing that you use the GF version, but I thought I'd better mention this problem, just in case some new members might not be aware of it.

@Linda....yep I'm thinking it was all the soy sauce I reacted to. I have never tried a macaroon and I love sweets!

@ Monique...I need to read your post!

@Tex....funny about the Rice Krispies....hubby asked me just yesterday if I could eat those and I told him I thought they had gluten in them. So was curious and checked at the store....you are right....says "malt flavoring". Jeez!! I haven't seen the GF one at our store yet.

@Sheila....I did notice the guar gum...can't seem to get away from that in processed foods. Meaning I need to adapt to a more modified Paleo diet as well. However, I've had other things with guar gum in it and have never reacted. I have no business eating all this processed food.

So I'm thinking the culprit is soy but I do so well with other beans so go figure!

Tex...yes, I was aware of the barley malt in the reg. krispies....I learned that one the hard way! :lol:

Sheila....all those 'gums' are gross bad stuff ...not only from a MC point of view, but for general health.

If you are going to bake GF bread etc, you will need gum of some kind. I have no problem with xanthan gum. If you can't tolerate either xanthan or guar gum, there are alternatives that don't work quite as well. Check out on line GF cooking sites or the public library. There are many excellent recipes right here on this site.

You are right about processed food. We are much better off with simple, pure food. I bake bread, paleo muffins, butternut squash soup, turkey and duck broth, GF cookies and know exactly what I am putting into my body. Time spent cooking trumps time spent sitting on the throne with D or suffering with gas pains.

I'm just glad that I enjoy cooking. It would be such a chore if I didn't. I don't know how people are able to avoid it when they have this disease. I also don't know what I would do if I was working right now and had to make all of my own food. I guess I would develop a routine AND I would be in remission and not so tired. I feel very lucky that I can get good clean meat from local farmers as well as eggs and during the summer, fresh produce that I can and freeze.
We live in the fruit belt of Michigan and the blueberries, strawberries and cherries are in abundance when we don't have a late frost (as we did last year!).
