Does anyone else start to think they can eat anthing!?

Post by ladyathome »

I have been feeling great for some time now, but over this past week, I have fallen back into my erroneous thinking that I'm normal like everyone else in my family! Slowly, I eat one or two things that I have cut out, then when I don't have a big reaction, I begin to think I can eat without consequences! Stupid! When will I learn that this isn't a short term problem!

I just did my Entrolab test this morning! Following the 24 hour freeze, it's headed back to the lab! I suppose this was a good time to do it since I had a small amount of gluten and dairy, and I ate eggs, rice, and beef this past weekend  I've had them completely cut out prior to this slip! Of course, I ate them all basically, so I have no idea what caused the D again.

...I would like to know if my slip will alter my Lab results or will it just show even more which of these items I'm reacting to again? I'm so excited to find out exactly what I can and cannot have. Maybe if it's in print, I will get it into my thick skull once and for all.

Enterolab is not the be all end all answer. I tested positive to only gluten, yeast and casien, I tested for everything else they test for and it was all negative but I continued to have D for 4 years. Recently I am doing allergy elimination and desensitivation with elimination of corn, egg, coffee, chocolate, soy, sugar, beans including green beans, ...... too numerous to list, and am finally having results!!! Just FYI Enterolab is a guide but not the complete answer for some of us.
Two roads diverged in a wood, and I took the one less traveled by and that has made all the difference.

Enterolab has definitely helped me and I have learned a great deal from the results, but KD is correct; it is a guide like everything else. It would be nice if there was some definitive test that would tell you everything you wanted to know, but there just isn't and I am still having to figure out what causes trouble for me. Though I supposedly did NOT react to many grains except oats, I still suffer when I eat cornmeal or too much rice. My test results did not show a reaction to soy, but I know that much of that causes gas and bloating for me. Enterolab only tests the IgA, not IgG or IgE and some foods react to one of those. I am KNOW that I cannot eat tree nuts, but that did not show up on the test. It could be because I have not had tree nuts in so long or that it reacts with IgE, but not IgA.

You will learn, when you have been "burned" enough. It is hard to imagine never being able to have some one food ever again. That is why I tell myself that for today I will not have it. I might tomorrow, but just for today, I won't eat it. That works for me--the one day at a time strategy. It also helps to come to this forum and talk about my struggles with various foods. Everybody understands that it is no picnic.

Your "self-destructive" behavior will not negatively affect the EnteroLab results. It will probably cause your antibody results to be slightly higher than they would have been otherwise.

In fact, a common trick for detecting food sensitivities recommended by some allergists is to avoid a suspected allergen for about a week or two, and then try it again. In that situation, your reaction (symptoms) should be more severe than they would have been if you had been eating the food without interruption.

Many members have noticed that if they slip up on their diet, their symptoms are more severe than they were originally. This is due to the way that immune system responses are launched for subsequent exposures to foods for which an adaptive immune system response has been developed, and it should remove any doubt about whether or not we are sensitive to a particular food.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

I received my lab results last week and have sensitivities to all 11 of the antigenic foods from panels A & C !!!!!! I was really hoping that it wouldn't be so severe, but it is what it is.
Remember there is a stress factor with microscopic colitis. You can be eating the right foods and if an emotion situation happens, it can be a set back as severe as eating the wrong foods.
It's a whole mind and body thing! That's why is it so hard to control for very long. But, as you get to know your body and the way it reacts, it should be easier.
I was very glad to get my Enterolab results because I had something definitive to work with, finally!

My question to anyone that wants to chime in...will the food reactivity ever change? If my body reacts to these 11 foods now, will it always be this way?

Thanks,
Linda

Hi Linda,

I scored high with tuna and white potatoes. I was able to eat them about once a week after about 7 months and still eat them. Rice was a medium and in many ways is still problematic.
Early on I'd suggest steer clear of the foods with the high scores. Brandy

Thanks, Brandy!

I guess I was confused because some people retest at Enterolab after a year of stopping the reactive foods, and their #'s come down. I guess I don't understand why I tested so high for everything!
My highest score in meats was beef. I never eat beef. That's why I wondered if I can ever eat the foods that were tested and showed a reaction to? Seems like it's a permanent thing.

Funny you mention that, Ladyathome.... since I've been on the Entocort (5 days) and feeling better, I'm always wondering if I should try this or that. I've been good though since I'm still going through the healing process.

Basically it's a normal thought, to want to eat what you want to eat. When I eventually am able to sneak a food in to see if I react to it, I always wonder, what oh what will it be?

Oh man...mine is fried chicken! Not GF fried chicken...but the real thing! That's what tripped me up this weekend! My daughter ordered it from on of our favorite "country cooking" restaurants here, and I couldn't resist a bite...then another bite! That made me really brave so the next day I tried the shepherd's pie my husband ordered...just a little taste couldn't hurt...but it does...it really does!!!

I love what Tex said with the smiley cracking up at me!

No bone! I guess you can add one if you want! ha :dogrun:

:ChefStirringPot: It's pretty simple soup to make.

2 lbs ground turkey (more if you like more meat)
1 onion (if it doesn't bother you)
3 cartons GF chicken broth
Organic carrots peeled and cut in bite size chunks
Organic spinach
garlic
salt and pepper

Saute the ground turkey and onions in olive oil until they are fully cooked.
(add some salt and pepper to the meat and onions when cooking)
Add 3 cartons of GF chicken broth
Put the carrots and garlic (let simmer until the carrots are fully cooked)
Add the spinach and some garlic and let the spinach wilt

I also add some Everglades Seasoning (but it does have MSG)
(you could use Tony Chachere or any seasoning you like for extra flavor)

I don't usuallyadd anything else but...you can substitute anything or add other veggies (organic peas)
or potatoes, quiona, rice, or GF pasta if you don't issues with those.

(Works with ground chicken breast too)

This recipe sounds really good. Never thought to make soup with ground turkey or chicken. Gonna have to try it for a change. I always use a whole chicken or turkey carcass or legs.

I have to say, fried chicken sounds wonderful. We have a wonderful fried chicken restaurant here, a little hole-in-the-wall bar that serves the best, crisp outside, juicy inside, served fresh out of the fryer.

Dear JeanIrene

You're killing me!! beat_deadhorse:

Your restaurant sounds wonderful!

Ground turkey/chicken is now my new beef! I use it in everything I would have used the ground beef in before. I made ground turkey patties with sauteed onions and covered it homemade guacamole for dinner last night. Pretty tasty!
