Mini Turkey Meatloaves

Mini Turkey Meatloaves

1 pound ground turkey
1 cup grated sweet potato
1/2 cup chopped fine onion
1/8th teaspoon black pepper
1/4 cup bar-b-q sauce

Mix all together and form into 4 mini loaves. Brush tops with extra bar-b-q sauce.
Bake at 400 for 25 minutes

I tried this last night and it was amazing! Everyone in my house loved it! :)

The only difference I did was make them in muffin tins, so they were a bit smaller and the extra I froze so I could take to work for lunch. It has definitely become a fast fav!

Hi Dee, I was about to ask a question, and saw this. My question was how do you avoid crumbly meatloaf? I don't remember before MC my meatloaf falling apart, used Progresso bread crumbs. Now I have tried GF bread crumbs, GF fresh bread Cuisinarted into crumbs and soaked in a bit of DF milk, just doesn't hold together. I use 1 egg, tried grating the onion as per one suggestion, added grated celery, still crumbles. (Tastes good though!) Dave is SO patient! Is it the grated sweet potato that holds it together?

Would xanthan gum do anything?

Any and all suggestions welcome!
