I'm glad it's working so well for you, Jean. I'm sitting here eating a pumpkin paleo muffin trying to keep from losing any more weight. Since the MRT test and finding out that I had to give up chicken, carrots and so many other staples, my cooking has gotten to be a real project. I can't buy stock because it all contains something I can't eat. I've found that home made duck stock has a lot of flavor and the meat freezes well. I make butternut squash soup with it and freeze it in meal size containers. I add some frozen chopped duck or pork to the soup. I love zucchini pancakes made with coconut flour and almond flour or spaghetti squash with mushrooms and shallots, stuffed portobello mushrooms. I don't tolerate many veggies so my diet is fairly small and gets boring. For those of us who don't want to eat a lot of meat, this diet is a challenge. I could live on pasta, quiche and risotto and here I am, forced to be a carnivore. Oh, if only I could eat eggs! The problem is recipe fatigue. You've eaten the same thing so many times, you don't want to look at it anymore. Wine made it more tolerable but that is off the table now, too. :cry:

Sheila, tell me about your zucchini pancakes. I love any kind of pancakes, but without eggs??? I know what you mean about being a carnivore now. Like you, I could live without it. You couldnt get any better than a nice dish of pasta! Oh, we'll, we enjoyed that for a lot of years. On to a new adventure. :lol:

Sorry, Jean, but the zucchini pancakes have 1 egg. I eat them occasionally and the egg doesn't seem to bother me.

2 C coarsely grated zucchini
1 egg, beaten
1/4 C minced shallot or onion
2 T coconut fl
2 T almond fl

1/2 tsp baking powder
1/2 tsp salt
1/4 tsp oregano
1/3 C Parmesan, if you can eat it

Mix all the ingredients in a large bowl. If the mixture is too liquid, add a small amount of coconut and/or almond flour.

Melt 2 T coconut oil in a large non-stick frying pan and heat over medium high heat. Drop zucchini by large spoonful and cook til brown. Turn and cook until well browned on both sides. Top with a small amount of Coconut spread, Enjoy Life margarine or your favorite spread. If you tolerate Parmesan cheese, sprinkle with 1 tsp +- per pancake.

Update on zucchini pancakes: these take a little time to make and you do have to have fresh zucchini, so I froze one of the pancakes out of the last batch. It defrosted perfectly and reheated in the microwave. It wasn't quite as good as a freshly made pancake but was more than acceptable and very convenient. I'll make a double batch next time and freeze individual portions. I love having good, homemade GF etc. food in the freezer.

Sheila, I made a double batch too, and they reheated beautifully. I will make them again soon. Really loved them and the eggs didn't seem to bother me at all. A side of bacon is good with these! I like to hoard all kinds of muffins, crackers, etc. too. Makes me feel secure. :grin:
