Homemade margarine

Post by wmonique2 »

Carol,

BRILLIANT! I haven't had any for a very long time. Everything out there is loaded with soy. THANK YOU so much. I'll try it when I get all the ingredients together. The lecithin comes mostly from soy. I have to see if my health food store has it...

I wondered how important the lecthin is really. I know it thickens but since i can't have soy I may just do without rather than find an alternative. I've been using Earth Balance Soy Free margarine, but what I liked about the idea of making my own was the idea of adding herbs to it-- garlic or basil. Could be a nice change-- think of basting some shrimp on the grill with garlic butter. Yea.... like that.

Lecithin is often used as an emulsifier — to keep the ingredients mixed. Without it some of the ingredients may settle out, but if necessary that could be handled by stirring thoroughly just before use.

And yet you entertained the thought after your first reaction. Not me! The less I can get away with the better.
I make ghee. Margarine is one step too far! I am SO glad I have the choice!

This recipe seems overcomplicated. I'm going to make my own using my body butter recipe, which simply means melting the coconut oil in a double boiler setup (bowl sitting in hot water), adding olive oil (roughly 1 part olive to 4-5 parts coconut), adding salt, herbs, maybe garlic powder, and the turmeric for color. A dollop of bacon fat might be interesting too...

Put liquid mixture in fridge until it starts to harden, then whip with a spatula to combine ingredients and store again on the fridge. No electrics required! Re-whip as needed as you use it.
