Recipes I've Come Across Someone Else May Enjoy
Hi everyone -
I get so much from the posts, recipes and ideas here, that I wanted to share a couple of things I have found I enjoy. For those who are not sensitive to them, possibly you'd like to try them also.
Coconut/Chocolate Chip Cookies
Ingredients:
1/2 C coconut oil
3 T Raw Honey
4 Eggs
1 t Vanilla
1/8 t Oxidized Sea Salt
1 C coconut flour
1/2 C shredded unsweetened coconut
3/4 C GF/DF/Nut Free chocolate chips (I use Enjoy Life brand)
Melt honey and coconut oil in microwave. In bowl combine coconut oil and honey with eggs, vanilla and salt.
Stir in coconut flour, shredded coconut and chocolate chips. The consistency will be flakey. I take 1 tablespoon
and form it into a ball firmly, then flatten between my hands. No oil necessary for cookie sheet. Just place on cookie sheet and bake at 375 degrees for 12 to 15 minutes.
Sweet Garlic Chicken
Ingredients:
4 boneless/skinless chicken breasts
4 garlic cloves minced
4 T brown sugar
1 T Olive Oil
Sautee the garlic in olive oil then remove from heat. Stir in the brown sugar. Place chicken breasts in a baking
dish (I use nothing in the pan, and use a 9x11 glass pan). I then cover with the garlic/olive oil/brown sugar
mix (patting it on). Bake uncovered at 450 degrees for 15 to 30 minutes. I check mine after 20 minutes and
they are usually done, but it will depend on the size and thickness of your chicken.
I know these are not overly fancy recipes, but these are coming from someone who never liked to cook 1-1/2 years ago. I am enjoying finding out I can get around in a kitchen after all!

I also have a chocolate chip cookie recipe that is similar to yours but does not use eggs, if anyone is interested.

Here it is:
2 1/2 cups almond flour (I suggest you put in 2 cups and see if you need more).
1/2 tsp salt
1/2 tsp soda
1/2 cup coconut oil- melted
1/2 tsp almond extract (I have used vanilla).
3 tblspoons honey
1/3 cup water (not always needed-- just check the dryness of the batter)
Chocolate chips (I use Enjoy Life) as many as you want
2 tblspoons potato starch
(and sometimes I add 2 tblspoons brown sugar to give more of a toffee flavor)
Heat oven 350 degrees and use parchment paper on the cookie sheet. In my oven they bake about 8-9 minutes, but watch them carefully. Once they start to brown they brown quickly. These are a light textured crumbly cookie. I love the texture. Makes me wonder why I wasn't cooking with almond flour and coconut oil all along. I've also put a little shredded coconut in these depending on my mood.

hi Leah, I would think so. I just didn't know how I did with cornstarch and I had potato starch-- it feels about the same.
This is a forgiving recipe. It's been easy to substitute and add.
