I wanted to share my two favorite recipes that have few ingredients, are easy to whip up, and have kept me from going crazy due to food reactions since I was diagnosed with MC.
For the cookie recipe I exchange the almond flour for pecan or hazelnut meal, because I can't do almonds. I also have to add 1/4 cup coconut flour or the batter is too wet. I have made it with just 1 TB of honey and it is great!

Energy Bars:
3 TB coconut oil
1 TB honey
Melt the honey and coconut oil in a saucepan.
Add to above- 1/4 cup carob or cocoa & stir.
Add 3/4 c. shredded coconut
Add 1/2 cup grounds nuts
Stir it and drop it on parchment paper. Form into a square and chill until hardened. Cut into bars.
I keep them refrigerated.
