I just took left over bones from a turkey, put it in the crock pot with salt, pepper, a bay leaf, and a little bit of apple cider vinegar...filled it with water and let it simmer on low for 24 hours. I found that I had to skim some of the fat from the top, drained it using a paper paint funnel and then used it to cook veggies in. Good stuff!
I oftentimes will also throw in onions, garlic, carrots and celery which I drain out. You don't even have to peel the onions - just chop into quarters. After a dinner of turkey or chicken, I just take the whole carcass that's left and put it in a stock pot with the above and cover with water. I'll put it in the oven covered, overnight at 225-250 degrees and get a wonderful broth by morning.
