Yes. Food sensitivity tests are very specific for certain proteins. Tests are usually designed to detect antibodies to the primary protein in a food that tends to be the most likely to cause problems for the most number of people.

It's possible to not be sensitive to the protein that the test is designed for, but still be sensitive to some other protein in the food. For example, with dairy products, a few people who are not sensitive to the primary protein casein, are sensitive to a secondary protein in whey.
