Here in the midwest I'm happy to buy frozen fish. Even when we're on the gulf in the winter I buy my shrimp frozen, as it's frozen right on the boat. I made the mistake of buying "fresh" shrimp in MN and when they didn't have enough for me they told me to go get some of the frozen and thaw it out, because that's what they do. :sad: I don't know if they flash freeze fish on the boat or not ??? but I generally feel safer with frozen than fresh (though we catch a lot of fresh walleye in the summer here). :smile:

Hi, When, going deep fish fishing for cod and haddock we always brought coolers loaded with ice to keep the fish cold. I always had the job of cleaning the fish on the ride back home and would just remove only the fillet and the remaining fish would be used for the lobster traps. Most of the east coast commerical fishing fleets store their catch on ice and the fish are sold whole at the wholesale markets when they dock. Then the fish that are not sold to resturants and fish markets are processed. The larger boats that fish in other parts of the world have the capacity to process the whole fish and fast freeze the product. While tuna fishing off the east coast of New England the large tuna that would be caught could be sold to the foreign large tuna processing ships that fish off the coast. When, I watch the movie "Jaws" I remember the days sitting in on the back of the tuna fishing boat throwing "chum" to make a trail of fish to attract the tuna to the fishing pole bait. When, the tuna takes the bait it is up to the person in chair to bring in the tuna. Sometimes, it would take six hours to get the tuna or occasionally a large shark. Jon

Jon,

I did ask when the shipments of cod/haddock arrive at my local grocery store. They showed the 'packed on' date, which was three days prior. So, if it was packed frozen, it should still be fairly fresh.

I would rather have frozen after it's caught fish, but it doesn't taste as good for some reason.

Does anyone buy the fresh (thawed) fish and refreeze it? Can you?

Linda, I haven't had good luck refreezing fish. It changes the texture and the taste. Deb

Thanks, Deb....Is it safe....bacteria wise, to refreeze? I have differing views from family members.

I have not expert knowledge about what is safe practice and what is not but I can tell you what I do, with no ill effects. I buy frozen cod in 1lb packages. I let the packages defrost enough to separate the fish into portions. I usually cook and eat one portion the same day and put the other portions in the freezer to take out separately on other days and cook and eat. It works for me. I suspect that I am less concerned about texture and flavor than other people might be.
