Ideas for my sweet potato

Since I have to give up my pat of butter :cry: (which I haven't yet), I thought I would find out what my potty people friends put on their sweet potato.

LOL! Sorta. I had forgotten that emoticon was on the big list. :grin:

I don't eat sweet potatoes like regular potatoes, so I don't miss the butter. I eat them a couple of different ways. My favorite is to cut them in slices with a mandolin, fry them in coconut oil, and sprinkle a little Celtic salt on them. They give me that crunch that most of us crave after eating so much soft stuff. They re-hydrate pretty quickly, so they get eaten just as soon as they are cool enough.

The other way I like them is to cut them in strips like French fries, coat them with olive oil, dredge them in a little tapioca starch, and bake those babies. I can't remember the temp--maybe 400 degrees? Anyway, they come out crispy on the outside and soft on the inside like the best fries ever. I put a little Celtic salt on them. I haven't tried putting sugar and cinnamon on them like some restaurants do.

Hi jazi.
I eat sweet potatoes all the time. If I use the darker skinned ones ( which are really jams) I just put a "pat" of coconut oil on it as I would butter. However my favorite kind is the light skinned ones ( less fiber and more like a white potato) and all I do it scrub them, leave the skin on. cut into cubes, toss with olive oil, salt and pepper ( chili powder is also yummy if you can tolerate) and roast at 425 for about 25 minutes. Toss them around half way through the baking. They get nice and crisp on the outside and tender n the inside. When I am only cooking for me, I do them in the toaster oven and use non-stick foil.

I don't remember the details of the origins of that emoticon (it's been here for many years), but someone requested it, and one of the founding members here (a wonderful lady who used to write the most creative and entertaining posts you ever saw) loved to use it now and then. It hasn't been used in years (until you posted it), because sadly, the beloved member whom I mentioned has developed degenerative memory issues that have reached the point where they severely affect her ability to post, and no one else has seen a reason to use it in any of their posts, since then.

I would hardly rate it as porn (there are plenty of real porn emoticons available on the internet, but not on this board), but if it offends you, I would be happy to remove it from the list of available emoticons. Just let me know.

Hi Jazi - I eat sweet potatoes often. I bake mine, and use Earth Balance (the soy free kind) and use iodized sea salt. I love them.

It's nice to read what others do with them. Something new for me to try.

I agree with Leah on this. Roast till nice and brown with coconut oil. I cut mine in wedges. They are wonderful!

Same here. I peel my sweets, cut them in wedges, dredge in coconut oil, sprinkle with cinnamon, salt and lemon pepper. Bake at 400 for 25-30 min., turn over half way through.

I kind of like Boob Lady. Reminds me of my Grandmother's best friend. We were really little kids and Grandma called her friend "Tits". My Mom just about fainted when we told her about Grandma's friend. Grandma was a real character.

I eat them like a baked potato with olive oil and celtic sea salt or slice them in rounds like fried potatoes and spread them on a cast iron skillet with coconut oil. It cook well on the stoce top or oven and gets crisp.

I bake (usuallly in foil - makes them softer and more moist). Then sprinkle with olive oil and salt or maple syrup and cinnamon.

I eat lots of sweet potatoes. To use them as a "dessert" you can mix in some brown sugar and cinnamon and/or a little crushed pineapple. I often sprinkle chopped nuts on top too.

Wow, sounds great Mary Beth. I was looking for a recipe to make for my son's new family that would appeal to everyone. I'm going to try to introduce chicken back into my diet, very slowly, and this would be a great start. Thank you for sharing.
