A gal at my farmers market has been selling fermented cashew cheese. Ingredients are rejuvelac, cashews, and salt. The rejuvalac is the liquid from fermented buckwheat groats. She blenders cashews to which the liquid rejuvalac is added and blended and to which salt is added. THIS IS REALLY REALLY GOOD. It tastes kind of like a cross of alouette soft cheese in tub/cream cheese/mild goats cheese. I'm buying a little $5.00 tub every week but will definitely try to figure out how to make this. Website is mouskowitz.com if anyone wants to read about it. The boyfriend and I have added this to the top of GF pizzas to good results. It is a great chip and dip thing. She sells it to 5 restaurants in town that I believe use it as a vegan cheese pasta sauce--kind of like an alfredo. I have not tried that because the tub does not last long at my house.
Sandor Katz has a rejuvelac recipe in his Wild Fermentation book http://www.wildfermentation.com/wild-fermentation/ but I won't get around to trying this until probably November but I wanted to post my discovery in case anyone else wanted to experiment.
This would also be a good side income for an mc-er who has 3 or 4 thriving farmers markets in their area and a vegan population. These gal's seem to be doing pretty well with the product.They have a sign up that says gluten free, dairy free, soy free, vegan and give samples on little rice crackers. The are also selling to 4 restaurants that use the product in vegan dishes.

A local restaurant, Christopher's Kitchen, makes macaroni and cheese using cashew based cheese. I didn't have it when I was there but will give it a shot next time. If it actually tastes like cheese, wishes do come true. I really miss cheese.
