Hmmm, I'm not about to try cheese, yogurt or cream anytime soon, but I'm making my own clarified butter. I'd love to add them back in if and when I "heal" someday!

That author doesn't understand food sensitivities (nor are mathematics her strong suit). She says:
While casein is still present in butter there is typically less than 1g of protein per 100g of butter making side effects from the consumption of butter very rare indeed.
1 % is 10,000 parts per million (ppm). Most of us react to any level over 200 ppm, many of us react to anything over 50 ppm, and some of us react to as little as 10 ppm. The 10,000 ppm of casein in butter is what makes most of us as sick as a dog if we accidentally eat anything with butter on it. Who is she referring to when she says that it is "rare" to have symptoms from eating butter? Surely not any of us who are sensitive to casein.
