A fantastic paleo dessert!!!

WOW, you're all making me hungry. I do freeze bananas for smoothies, but Like Tex said, they do get pretty brown if you don't eat them soon enough. Bananas make great smoothies though and I'm sure the ice cream must be delish!! I will have a lot to check out this summer with all these new fruit ideas. I'm hopeful that we will be seeing a lot more. There is a place in VT that makes a sorbet that is suppose to be very good and it's sold at a big fruit stand a few towns over. I'm going to check that out this week. Being DF is sending me on new adventures.

I make this a lot. It tastes wonderful. Put a little honey and vanilla in it and it is just like ice cream. I found it while I was doing the SCD diet.

Celie, that sounds incredible! I actually had the SCD diet book years ago (before Dx - wish I hadn't given that away - to someone who probably should be using it, but isn't...).
Are you doing your own adaptation of SCD now? I'm trying to figure out my next steps. Bananas have been my buddy these last weeks ;)

Hi Sara,
I am not doing SCD at this point. I was unable to get relief from the diet alone. I did the enterolab testing and decided to focus on eliminating gluten, dairy, yeast, egg and soy from my diet. So, I am still very close to SCD, but I added back a few things like rice and potatoes. I still use some of the recipes. I like the chicken and carrot soup when I am not feeling well. And, I found a couple of cookie recipes that I like a lot. And, I love the banana ice cream. I have bananas in my freezer. While following the SCD, I learned a lot about all the junk that is in processed foods. Working with that diet made me want a more natural diet.
I am still trying to find my way. I am in the middle of a medication experiment. And, I am hoping that someday I will be able to use diet alone to control my D.

I can't wait to try that at home!! When I was a kid I lived on "chocobananos" in Latin America. An ice cream chain sold these frozen bananas dipped in dark chocolate on a stick. Trader Joe's sells them now, but they're often freezer burnt, or clearly thawed and refrozen, so I've given up on them for a while.
My parents run a coffee farm in Guatemala that grows TONS of bananas. They cannot export them fresh (they are not the long shelf-life variety sold here), so they now make sun-dried bananas in a special building with a clear roof. Everyone I share them with goes bananas over them (pun intended). It occurs to me they would be great for the MC/celiac/food allergy community. They have absolutely no other ingredients, are produced in a GF/DF/SF facility, are easy to eat on the run, and they last a very long time. Unlike dehydrated bananas, these have an intense sweetness and caramely quality that people love. Their consistency is similar to that of a date. My parents are headed here for a visit with a suitcase full, but I sure wish there was a better way to import them without a high cost. Here's a link to "Bananas to Go" (I made up the name).

My sister just sent us a machine as a gift. I luckily had cut up bananas in the freezer. My DD#2 and I enjoyed the "ice cream" it made with no other ingredients. I think it will be even better with added ingredients.
Someone online said to buy it (with coupon) at Bed, Bath and Beyond because they will take it back any time if it fails. Don't know if that is true or not......

Wow, Polly. I didn't notice the dates on the messages after your message. Seeing Sarah blew my mind.
Half of my breakfast every morning is made in a Bullet and tastes like soft serve fruit ice cream. Using Tex's idea for cut-up frozen bananas, I also add small amounts of frozen mango, frozen peaches, frozen raspberries, frozen strawberries, a large spoonful of raspberry sorbet and just enough apple juice to make a thick smoothie. Doesn't bother my stomach and is delicious. Here in Florida, we would put fresh mangos or fresh lady bananas into a processor with good vanilla ice cream. So good.

I've been eating this for the past year ever since I went dairy free. It's an investment purchase but I bought a Vitamix blender and it handles the frozen banana just great. My recipe is 1 frozen banana to a quarter cup almond milk and then whatever other frozen fruit that you want to flavor it with or sometimes a tablespoon of unsweetened cocoa powder for chocolate ice cream. The Vitamix comes with a long tamper tool that you push down on the chunks of fruit while you are blending and get them chopped up really well.
My juicer has an attachment that makes frozen fruit ice cream, of which banana is the best. I have done the banana and then pushed through some frozen berries so that they form a topping. Chop some roasted pecans on top and you have a sundae!
Right now I am not eating bananas (or much of anything) right now, but previously I made smoothies and ice cream using frozen bananas all the time.

We vacationed in Rehoboth last year, and I went straight to Annie's Bannanies, after learning of it through the DC celiac listserv. We loved it so much, we went there EVERY NIGHT after dinner and my husband interviewed Annie. At the time, she posted a notice saying the store would be closing for good over the winter. I wonder if she changed her mind?? She told my husband too many other people had stolen her idea, and it was not a profitable business, or something along those lines. It was my impression she had been in business for at least a few years. Maybe she sold the business to someone 6 months ago? Maybe you met with an Annie impostor??
