EnteroLab Results
Hello,
I received my EnteroLab test results yesterday and I am having trouble reading the results. I was diagnosed with CC in May and am now down to 3 mg of budesonide one time a day. I started out taking 18 mgs (6 mg three times daily.) Being one of "those" people who thought that I really didn't have any issues with my diet, I have not taken steps to correct my diet, until today. I am also thinking about trying the Paleo diet, but don't know if this one is right for me.
I tried to copy my results, but for some reason I couldn't get it to copy. Brain fog!! So this it the jest of the test:
Gluten/Antigenic Good Sensitivity Stool Panel
Fecal Anti-gliadin IgA 51 units (Normal Range is less than 10 Units)
Fecal Anti-casein IgA 21 units "
Fecal Anti-soy IgA 23 units "
Expanded Antigenic Good Sensitivity Panel
Mean Value 11 Antigenic Foods 15 Units "
Food to which there was no significant immunological reactivity: White potato
Food to which there was some immunological reactivity (1+): Oat, corn, rice, beef, tuna, chicken, pork, cashew
Food to which there was moderate immunological reactivity (2+) None
Food to which there was significant immunological reactivity (3+): Walnut, almond
Grains order most to least reactivity: Oat, corn, rice
Meats order most to least reactivity: Beef, tuna, chicken, pork
Nuts order most to least reactivity: Walnut, almond, cashew.
Does this mean that oats, beef, walnuts and almonds are forever out of my diet? Where do I go from here?

Sorry about the results. I haven't had the full Enterolab panel (just the soy, milk, gluten portion), but if I were you, I would eliminate walnuts and almond and eat the others sparingly...see how you do with them. Keep a diary of when you eat them and see if they aggravate the D. You might also eliminate them for 60 days, then reintroduce to see what happens. The most important thing will be to cut gluten, dairy and soy. Walnuts are high in histamine anyway. Almonds are a staple of the Paleo diet (most of the grain-free baked goods are made with almond meal), so you'll need to try a modified Paleo diet, perhaps keeping a couple of "safe" grains, and eating all the potatoes and sweet potatoes you desire!

Thanks Zizzle. This has been a very hard year. Not only did I get sick, but I lost my mother in May as well. I am now the last one in my family. Lost my brother and sister three years ago, my dad 20 years ago. I think that was why I was in denial concerning not going on the correct diet. I didn't want to face up to the fact that I did have a disease. Too much going on.. Oh well, now to find great recipes. I love to cook so this will be fun. My daughter brought over gluten free potato soup for tonight's dinner. Looking forward to that!

I have no idea about eggs, sorry. That was the one thing I was OK with. There are so many great sources of paleo recipes out there. If you are on Facebook, there are tons of great personalities to follow (who have websites and blogs too). I wish I had the time to cook great paleo-style food, but I work full-time and have 2 kids, so I don't get that creative.

The foods to definitely avoid are the +3 foods, walnuts and almonds. You may be able to eat the +1 foods. It is the ratings of 1,2, and 3 that are most important rather than the rankings within the meat, nuts and grain categories. I eat several foods that were +1 on my Enterolab results. I have not tried any of the other +2 or +3 foods. I think you left out your egg results.
I eat a paleo diet. It works well for me.

You are so right, I did leave out the egg. The results for the egg was 21 units. Does that mean no eggs for ever? That's going to be hard, but I guess that's okay. I am sure there are several who can no longer eat eggs.
By the way Jean, what kind of dog is sitting on your lap? So so cute!

I agree with the responses that you have already received. Regarding eggs, 21 is a relatively high score, but it's possible that after a few years you may be able to tolerate a few eggs used as ingredients in baked items. The odds of ever being able to safely eat them individually are probably rather slim though, unfortunately.
Since the overall score on your 11 antigenic foods test was only 15, I agree that you will probably be able to eat most of the foods in the 1+ category, though you may need to test them to be sure. It's even possible that if some of those foods seem to bother you if you eat them every day, you might be able to tolerate them if you rotate them so that each one of those foods is never eaten more than one day out of every 3 days (IOW, a 3-day rotation program).

I don't bake. I used to before giving up eggs but decided it was easier to just no longer eat baked goods than to figure out how to bake without them. I know people here do bake without eggs and use various substitutes. I am sure there is a thread or 2 on the topic if you search.
Coton de Tulears and Havanese are similar dogs. Theo is my second of this breed. They really are great companions.
