1 cup quinoa
2 cups water
2 cups apple juice
1 cup raisins
2 tablespoons lemon juice
1 teaspoon ground cinnamon, or to taste
salt to taste
2 teaspoons GF vanilla extract
Rinse quinoa thoroughly. Allow to drain, then place quinoa in a medium saucepan with water.
Bring to a boil over high heat. Cover pan with lid, lower heat, and allow to simmer until all water is absorbed and quinoa is tender, about 15 minutes.
Mix in apple juice, raisins, lemon juice, cinnamon, and salt. Cover pan and allow to simmer for 15 minutes longer. Stir in vanilla extract. Serve warm with fresh fruit and drizzled with pure maple syrup.

I notice that people usually respond with questions about the recipe, but I just made this quinoa and it is delicious! I can't do dairy and don't have any dairy free ice cream on hand, so I just drizzled it with maple syrup and poured a little unsweetened vanilla almond milk around he sides and it tasted SO good! I am still on a relatively bland diet and any food with actual flavor is a real treat. This would be a great breakfast substitute for oatmeal, also. Thanks for posting the recipe!

Hi Dee,
I made this quinoa recipe for breakfast this morning. I changed it up a little bit. Didn't have apple juice but I had cranberry pomegranate juice. Left out the lemon juice and then added 1/2 cup pecans. The half cup pecans was probably too much. Will add 1/4 cup next time. Was so very very good.
