Hi All!

I'm eating a very simplistic diet. I eat three safe meats and rotate them. I eat buckwheat or teff bread and waffles (with a tablespoon of maple syrup) in the a.m., with the meat. I usually have an eggless coconut macaroon for dessert (there's a small amount of maple syrup in them). I make my own sunflower seed butter for a snack. I cut out all tree nuts, fruits and veggies for now, and eat no processed foods.

I was doing pretty well for the last 5 weeks.

Now, after I eat lunch and dinner I get a belly ache and some bloating. This does not happen after breakfast. Is it the coconut macaroon (coconut or maple syrup??), my 1/2 cup of decaf coffee after lunch, or too much fiber in the buckwheat?

I have norms, and no D, and usually only 'go' a couple times in the morning, which is normal for me.

Linda I might suspect the sugars in the syrup or as you mentioned the high fiber in the buckwheat bread. Is the bread really gluten free? Is it store bought?

I would have to agree with Joe. Whenever I eat something with a lot of fiber in it, I bloat.

Hi Linda,

Any time my belly aches or I get that bloated feeling, it's because I've eaten something I can't tolerate. Look closely - again - at the ingredients in your bread and waffles (all foods) for clues.

What gluten free flours can I use that are low fiber? Rice was a +3 and almonds +2 on Enterolab. I tried chestnut flour, but didn't tolerate it.

I don't know if this is relevant but I had a bad reaction to GF coconut macaroons a few weeks ago. Someone at church brought the cookies for me and, against my better judgement, I ate two cookies. Within an hour I had pretty severe stomach pain that lasted the rest of the day. Looking at the ingredients, there didn't seem to be anything problematic. BTW, eating my homemade GF cookies which contain sugar, don't bother me.

My guess would be buckwheat. next experiment...... don't know what flour you could use. look up some GF recipes on line and see what substitutes you find.

Does anyone who scored high on Enterolab for rice or almonds use the flour? I would think that's a no-no....but, don't know if I should try?
I tried sorghum, millet, & chestnut flour and they didn't work, but did well with buckwheat and teff.... until now....I wonder if it's the coconut? I got a new kind of decaf coffee...maybe it has soy...as do most of the teas I have researched.

It's definitely a conundrum!

I get the impression that most tea and coffee processors/manufacturers tend to add more ingredients than necessary, change them from time to time, and try hard to keep the ingredients a secret. They will proudly proclaim that their products are gluten-free, but they won't always tell the customer what's actually in them, so that those of us who have multiple food sensitivities are left wondering. That's the biggest concern I have about coffee and tea.

At least a couple of us here have problems with almonds, but we can use almond milk (I'm thinking about Gloria and myself). Since I'm not a huge baking fan, I've never even tried almond flour, but Gloria gave it up, I believe.

if you know for sure that you can't eat rice or almonds, then you should not be using the flour. The flour is just the ingredient ground up very fine. As for coconut... it could be. Can you eat ANY nuts? If not, all tree nuts might be out for you ( including coconut). I can't drink decaf coffee or any kind of tea (except herbal) :(

Well, I didn't drink the coffee today, and guess what? No bloat or belly ache! It must be the new organic decaf I just started drinking 4-5 days ago.....that's when the problems started.

I'm hoping that's all it is. Time will tell.

Now the floaty stools and mucous are back! I made an amaranth muffin 2 days ago, and thought that was the issue, but it happened again this morning. I took out sunflower seed butter because I was getting a bit queasy in the morning, and that's my sign for histamine build up. I found that sunflower seeds are higher in histamines than pumpkins seeds so, yesterday I switched to pumpkin seeds....and still floaty!

Oh, and I added a small amount of cooked carrot this week, because I haven't had any veggies in a month!

What now, batman?
