Hi All. I just wanted to let you know that i found a delicious REAL dark ( but not too dark) chocolate that uses Sunflower lecithin instead of soy! italian brand PERUGINA. YUM!

I bought it at a local grocery store, but I think I have seen this brand in other places. I just never read he ingredients list because i always get so discouraged because they all seem to have soy.

Awesome! BTW, does anyone know if Giardelli chocolate is GF? They don't mention being produced in a facility that uses wheat, so I wonder if it's safer than other brands? I usually eat Food for Life chocolate chips, but I love Giardelli's Sea Salt Soiree!

There is no reason why chocolate should contain gluten (though some manufacturers might be goofy enough to add it. LOL). It's soy lecithin that's the primary problem.

It appears some specialty chocolates are made with barley malt, and of course some may contain cookie or pretzel ingredients. Then you have to worry about the shared production lines. That's not even mentioning the obvious amount of milk cross-contamination potential, which I guess most of us don't fret too much about.

I just got some Equal Exchange dark chocolate. It does have the problem of shared processing facilities but as far as I can tell that has not been a problem for me. I haven't eaten chocolate for several months but thought I would try it again. It is high in histamine but since my diet is now very low histamine I am hoping a little bit of chocolate won't be a problem.

Here's the info on the label:

*Organic Chocolate Liquor, *Organic Raw Cane Sugar, *Organic Cocoa Butter, *Organic Unrefined Whole Cane Sugar, *Organic Ground Vanilla Beans. *Fair Trade ingredient. By weight 100% Fair Trade Content.

I recently found in Manchester NH a local chocolate maker called Van Otis chocolates. There local store sells multipe varieties of local made soy lecithin free chocolate, they use the cocoa butter to replace the soy lecithin, it is incredible.

This morning I had some of their milk chocolate with some Aussie coffee from a company called Merlo from Brisbane Australia, with a blend named Ariba Ariba...I can't think of a better MC safe morning treat!!! .....warning though, that Ariba Ariba is a real kick in the pants...wakes you right up!!

I figured some day someone would manufacture a lecithin product relatively inexpensively that wasn't made from soy. Good to see that apparently a Chile group has done so.

The firm isn't a house hold name, but many years ago I used to work with Lucas Myers. (We were owned by the same company, and I got to know many that worked in the lecithin division.) They were known as "The Lecithin People". LM sold speciality lecithin products, and would sell into the candy industry at times. I can remember a fellow in sales mentioning to me that a large baby food manufacturer would call him often to see if LM would come out with a soy free lecithin product, at a good price of course.

Joe - milk chocolate? I haven't dared try it. I would so love to. I am not great with dark chocolate.
