This thread inspired me to make chocolate coconut ice cream again. First in a long time.

Julie and other chocolate lovers with MC....from what I have found a good way to find a chocolate you can eat is to actually find the smallest "Mom & Pop" candy / chocolate shop.

You should be able to ask them to make a batch of chocolate substituting the soy lecithin with cocoa butter, the 2 are interchangeable...and frankly the cocoa butter chocolate tastes a LOT better, smoother and richer. The original chocolates were made with cocoa butter, the soy lecithin was only used to make larger scale production cheaper....not better. The chocolate with cocoa butter costs about 20% more but tastes a whole lot better. Usually a small shop will make a MC safe batch for you....well worth a bit of self indulgence.

Now that's what I call useful information.

Thanks Joe.

In all my "MC gabe safe" (DF/SF/GF/) cake and desert cooking, i use cocoa butter.
it gives the cooked items a smoother/richer texture (ie seems to remove the 'grittiness' that can occur when use GF flour etc)

I have also made a small batch of Cocoa butter/coconut oil lip balm

I don't care much for dark chocolate and shouldn't be eating it at all according to my test results. If I don't eat too much of it, I can tolerate a bit of milk chocolate, specifically the Equal Exchange organic Milk Chocolate with a hint of hazelnut. For milk chocolate lovers, this is pretty good.
