Is Chia seed pudding MC-friendly?

Post by Zizzle »

I made chia seed pudding with 1 cup almond milk, mashed banana, raw cocoa powder and 1/4 cup chia seeds. It was delicious!! It totally satisfied that piece of me that still longs for yogurt and chocolate mousse. I usually pulverize chia seeds into morning smoothies. This is my first time eating them "whole". They are gelatinous, but the seediness is still there.

I only had a couple bites last night, and I had D this morning, but I think it's related to a large salad I had yesterday, and blue corn chips and spicy salsa last night.

Can chia seed pudding be part of the MC diet? They certainly have many healthful qualities.

I ate the rest of the bowl this morning, so I guess I'll know soon...

Zizzle,

Some people use chia seeds as a laxative. Sounds like it works, but that wasn't a very definitive test, because as you know, the salsa (and salad, for someone someone who has MC) could have also had a similar effect.

I had a bad experience with chia seeds. The only way you could get me to eat them again would be to hold me down and force feed me.

Bummer!! I was so excited about my new treat! Maybe I'll try puverizing the mixture in my vitamix first, to eliminate the whole seed aspect. We'll see.

That may make it even more effective. With flax seed for example, the fiber in the hulls contains the laxative effect, so grinding flax seed turns it into a very effective laxative.

Buzzkill!

I've been griding flax seeds into my smoothies for months. But I'm still on low-dose prednisone, so maybe that's why it doesn't cause D.

Zizzle, I use ground flax seed and water as an egg substitute in my almond flour muffins. It doesn't bother me, but it is a relatively small amount. I haven't tried chia yet, and am kinda leery about it. The pudding sure sounds good though.

Lesley, I use one Tbsp. ground flaxseeds and 3 Tbsp. boiling water per egg. Let it set until it cools down a bit. Works well in my muffins and pancakes, not too well in breads. Am I remembering that you are not able to eat almonds?

I have been staying away from chia & flax seeds due to their fiber content. If you don't grind them, you don't get any of the health benefits from them, they simple go through your system.
I do use a flax egg occasionally in my sunflower seed muffin recipe, though, but it's not much flax that is consumed in a muffin.
Sorry, Zizzle...it's such a struggle, isn't it????
