Paleo Muffins ???

Here's another incarnation for your spreadsheet:
Hazelnut/chocolate muffins (classic combo, but this recipe makes too few to be economically viable for sharing. Utterly, completely delicious though!)
1 1/2 cups hazelnut flour
1/2 cup chestnut flour
1 1/2 tsp baking soda
1/2 cup grated chocolate (I used Dagoba unsweetened. It has no soy lecitin. Just pure cocoa butter)
Whisk dry ingredients together. This gets air into them and makes the mix lighter
1/2 cup coconut oil
2 large or 3 small eggs
1/2 cup agave syrup (more if you like it sweeter)
1 tsp vanilla (paste or extract)
I blended these in my blender. Also adds air.
fold wet and dry ingredients together gently, and spoon into muffin cups.
Makes 9 large ones.

I thought I'd report that I made the original recipe and substituted grated cranberries (that I had in the freezer) for the raisins and muffins came out yummy!
Also I find if I let the batter sit for 30 min to an hour after mixed b/f baking the muffins come out more "cake like." These instructions are also listed in the original recipe as a side note.

How are you doing, Lesley? Are you still taking LDN?
As for the muffins, I've never been without paleo muffins in the freezer since I tried the recipe years ago. They are a breakfast staple for me and something I depend upon when traveling. My favorite is made with canned pumpkin and pistachios.

Yes, I am taking LDN, and it's helping, though not my gut. I tried reducing the dose, and the pain came flooding back. I went back to 4.5, and the pain is better, though not gone.
I have not made muffins for a very long time. It's too hot to bake, and I am pretty sure I can't eat egg whites. Now I am beginning to suspect the yolks too. Very upsetting.
I will need to try again, see if I can substitute for eggs.
