All,
I have three suggestions that have proven to be not only harmless to me (and I'm on the elimination diet currently so this should be safe for everyone), but AWESOME, and almost as good as "normal" food!
1. Ener-G Tapioca Hamburger buns. They had a loaf of bread also, but these buns were more of a white bread consistency, and when toasted, taste just like white bread, only a little sweeter, like Hawaiian bread, if you've ever had it.
2. At the natural foods store, I found pure fresh honey, and freshly ground almond-butter (like peanut butter, but I can't have peanuts right now as they're not good for the liver - tree nuts only). I toasted one half of the tapioca hamburger bun, spread a thin layer of the almond-butter on it, and topped that with a light coat of honey. The result is something that tastes a lot like a glazed donut!!!! You really should try it. I can't recommend it enuf!!!!
3. At the natural foods store, I also found Arrowroot (brand) Maple Buckwheat Flakes. I tried these with Almond Milk and it tastes almost like frosted flakes and real milk! It gets soggy faster but it's been so long since I've had something resembling cold cereal and milk that I don't care!

Congratulations Christine!! It is a wonderful feeling to find a new "treat" to eat, isn't it.
You probably know this already, but peanuts aren't really nuts. They are in the legume family with beans & peas. I have been trying to avoid all legumes since starting the Paleo diet.
