Had GI consult yesterday and...

I was sent home after initial consult with a poop hat, three bags of different culture vials, a lab requisition to test for Celiac, and a colonoscopy appointment in early November. I have to say the highlight of this whole ordeal is pooping in a hat and scooping it into the little vials. That is some fun not everyone can say they have had. So my question is, where does one find an easy to read for newbies list of GF foods and very basic recipes?? I work many late nights so coming home from wrestling animals all day I am so not inclined to want to cook. You guys here are always so helpful, I don't post often but this is the only place where it all makes sense. Thank you all in advance. And btw, my NP gave me a 7 day trial of prednisone, all it did was make me hungry, thirsty and I peed a lot. Did nothing for the D. Sandra

Hi Sandra.
I hope that gluten is the only thing you have to avoid to feel better, but if you continue to not improve, then you should take a hard look at dairy and then soy. Also, while we are trying to heal , it's pretty important to avoid fiber- so raw fruits, raw veggies , beans and legumes should be avoided.

Hi,

I make big potfuls of a stew from chicken, rice, celery, carrot and string beans, (mostly chicken and rice) very well cooked in broth. In the beginning I ate that 3 meals a day. I still have it often, but I have added some different ingredients, and swap the chicken for beef sometimes. I freeze single portions.

I like having frozen meals available. It helps not to stress about food.

Sandra, the secret is to eat simply. A lean roast with potatoes and carrots, baked chicken, white rice, well cooked vegetables, grilled chicken or hamburger patties, baked potatoes or sweet potatoes, soup with chicken, carrots and gf noodles-- you get the idea. I had to avoid fat, sugar, caffeine, acidic foods, and fiber, along with gluten, soy, dairy and eggs. My crock pot/slow cooker makes life so much easier. I cook extra and freeze meals in glass containers then pull one out to take to work for lunch. I thought they might not taste so great, but turns out they taste very fresh when heated. I didn't worry about trying to find a bread substitute-- I just needed nutritious fuel, things didn't have to be like they were before. Some times I ate ground beef and white rice for breakfast-- whatever I could tolerate just to get some calories. I also looked at recipes for the Paleo diet. They are grain free and dairy free. I bought a cookbook called Paleo Comfort Foods. Lots of good ideas and recipes in there.
