My husband alerted me to this article this AM.
I scanned it (and the comments) and wondered, why does anyone care if people just want to eat GF?
AND Celiac is only one of the manifestations of gluten sensitivity. Just because it's the only one 'proven' by the medical community doesn't mean it's the only one. Sigh.

From that article:
And as we're all aware, classic allergies are only a minor part of the problem with wheat/gluten. I agree that attending a presentation offered by that doctor would apparently be a decadent waste of time. He probably doesn't know anywhere near as much about gluten as he pretends he does.
I do agree with him on the black mold, though. There's a lot of money being made on the black mold scare, and I doubt that will ever change in our lifetimes, because most people don't know they difference, and humans are naturally suspicious/afraid of anything they do not understand. And surprisingly, rather than to take the time to learn the facts, most people are willing to spend their hard-earned money to play along with such scams, especially if they think that it's the insurance company's money, rather than theirs.

Well duh! Gluten is the primary protein in wheat, and only proteins are capable of causing allergic reactions. You can jolly well bet that whatever causes allergic reactions to wheat is in gluten. Furthermore, wheat is the only plant that contains gluten (the prolamin protein that we refer to as "gluten" in barley and rye is actually hordein and secalin, respectively). And since there is no such thing as wheat that doesn't contain gluten, that means that the good doctor's play on semantics is just a dumb game, with no point. Shame on him for being a smart-ass.Wheat is a recognized allergy — but a lot of people will misinterpret that as gluten.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
