Some of you might remember my pancreatitis drama. Well, not having eaten anything since Wed, dealing with D and vomitting (more dry heaves, actually) and no liquids for over 24 hours, I went in to the ER for IVs (upon the nudgings of my dr.) Gotta say, glad I did, as the liquids really, really helped, and I'm doing a great deal better today. :)
Except, I'm starving, and have been told to remain on clear liquids for 72 hours. *sigh* What am I craving most? Hot bagels slathered in butter, and all sorts of pies fresh out of the oven, and hot bagels slathered in butter. lol (No, I can't tolerate gluten.)
anyway, I am going to start seeing a nutritionist, and in the meantime, would LOVE to make some turkey day foods I can eat. (Maybe I can get in with her before then.) My biggest struggle is, it seems I have so many intolerances. When I tested foods, I clearly reacted to gluten, dairy, oats, and fructose. The fructose is the one that confuses me most, so I've adopted an "eat only meat and rice or potatoes" attitude. (And I eat way too much olive oil, which I believe led to the pancreatitis. But I feel insanely ugly, having once again lost the cushion I'd managed to gain back in my face. So I eat the olive oil for calories, but maybe that was the largest reason I couldn't gain weight, because it was giving my pancreas problems.)
I'm pretty sure there are recipes I can glance at, on another thread. Does anyone have suggestions for dealing with the fructose issue?

Can you eat sweet potatoes? Coconut milk? I don't mean coconut water but coconut milk in a can. It's very thick, caloric and creamy and it's nice on sweet potatoes. It would probably be good on regular potatoes too. Turkey gravy made with corn starch is excellent. Can you eat sugar substitutes? If so, which ones?
Why is olive oil harmful to your pancreas? Hope you're back on your feet again soon. Isn't it crazy the foods we crave at low points? I was seriously considering eating a piece of Pizza Hut pizza today until I realized what a stupid thought that was!

The comfort food I am craving is hot crusty french bread with slatherings of butter and mounds of cheese.
Your sensitivities don't seem extreme given the ones that many of us have to contend with. You can eat eggs, nuts - you don't seem to have limitations - corn, rice, chicken, turkey and a whole variety of other foods I can't touch.
There are numerous recipes in D's kitchen, and all over the place. You can make wonderful turkey day foods.
Be careful of coconut milk. I use it extensively. TJ's and one other make (Goldstar) are pure. The others have additives like carageenan and other preservatives etc., that I. personally can't tolerate.
Coconut oil is great for cooking and baking.

It sounds like you can have turkey, gravy with cornstarch, potatoes, and cooked veggies. I am making GF apple pie, but you probably can't handle the fructose. I also make a GF/DF pumpkin pie that no one else could tell was any different.

I use the Trader Joes light coconut milk to cook rice in. It's also great to make soups with. I make a great butternut squash soup with chicken broth and coconut milk at the end.

Actually, I haven't been doing anything with fiber, no nuts (although I can do nut butter normally, though not when my pancreas is inflamed), and I don't do seeds. My GI put me on a chron's diet, but I feel that might've been part of the pancreatitis, so I've added brocoli--overcooked.
Honestly, I've never really reached remission--well, except Norman does visit most times when I'm on 9mg budesonide, 4 Pepto, and 2-4 immodium each day. But clearly, the rite, potato, and meat diet is not good. My recent ER visit verifies that. ;)
In answer to the Q as to why the olive oil was bad for the pancreas, I think I just ate too much fat. Which is one of the risk factors for pancreatitis. Who knows.
For now, I'm going to see if I can go back to just avoiding the biggies and see what happens. And since I know for sure gluten, dariy, and fructose is a problem... ;)
I did find a low fodmap recipe website, so I'll check that out. :) I think my biggest problem is I'm a lazy cook. lol But I've found a friend who'll help me try pie recipes to see what ones maybe I can eat. Too bad y'all didn't live close. Wouldn't that be fun? A food-sensitivity-baking party?

Yes, I would like that and a cooking school for the potty people. Maybe we could take it on tour!! LOL I was siting here today eating potato chips as a snack and giggling about how I had given them up years ago as they were not good for me and so I ate a whole bunch of things with soy in it because I thought they were more healthy. Oh brother....as the world turns!
On a good note, I called the dinner theatre I attend and told them of my intolerances. They had a plate waiting for me with steamed veg., salmon, and a baked potato. I felt a little silly taking my coconut spread out of my purse, but I got over it and the meal was great. Saw Cats for the third time and kept thinking about foods as she was singing memories...kicked myself in the foot and told myself I was lucky to be alive and there was lots I could eat. All is well in my world today.
