Barb,

I use corn tortillas — a Mexican brand (Gurrero), but they're made in Irving, Texas, and certified gluten-free. I believe Gloria makes her own.

After your immune system has a chance to settle down for a while, you may possibly be able to eat other foods, such as eggs or bacon.

Hopefully someone else can offer suggestions on other ways to add fat to your diet. I don't eat much variety, so I'm not familiar with all the other options.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Barb,

I have 4 slices of uncured (nitrate free) bacon every morning. Most of us can tolerate uncured bacon if you can find it. I save the bacon grease and use it here and there in cooking. I probably use more olive oil in the course of a day. I dated a guy who had 4 Sicilian grandparents and he drizzled olive oil on everything. I drizzle it on the top of my cooked veggies, cooked chicken and cooked fish. I add a couple of tablespoons to pasta sauce. I mix it in my mashed potatoes and on top of my sweet potatos. I mix it in my rice. Get a good quality one. It should be kind of greenish in color and taste fruity.
