Lesley, can you eat tapioca starch and coconut flour? I found a passable bread/pita recipe using just those as flours.

I think I can. I know about coconut. Haven't tried tapioca for a while. I have been trying to stay away from most grains, but it doesn't seem to be helping much.

So far I have not been able to stand for long to cook or bake. I will give it a try as soon as I can.

My attempt didn't look anything like the picture posted, but it tasted pretty good. It puffed up and was hollow inside, like pita bread. For my first try, I used garlic and cumin powder (I didn't have seeds), but I found I don't care for cumin in bready-type stuff. So the next batch I left out the garlic and cumin, but I did put in some poppy seeds. They weren't noticeable at all, so they seem more decorative than anything else.

He is contending that starches like corn and tapioca are just as bad for you as gluten.
I will still try it as soon as I can stand long enough to do it.
