Apple Smothered Porkchops

Apple Smothered Porkchops

Hey Wayne,

I'm not sure if you can eat all these ingredients, so email me if I can substitute anything (the thickener for instance).

4 pork chops
salt, pepper, dash of sage
2 T. Cornstarch or Arrowroot
1 c water
1 T. vinegar
3 T. brown sugar
2-3 apples, pared, cored, sliced

In a small saucepan mix cornstarch and b. sugar, then add vinegar, water, salt, pepper, and dash of sage. Cook, stirring over med heat until thickened, set aside. This should be smooth, not lumpy.

Fry porkchops in an ovenproof frypan in small amount of olive oil until they are browned and there are little bits of cracklings in the pan. (fry them either coated with a little GF pancake mix, (if using GF pancake mix check to make sure there is no soy in the ingredients) and salt, or naked) Take pan off the heat, pour on the sliced apples, then pour on the brown sugar/vinegar sauce. Cover and put in a 350 degree oven for 1 hr 30 minutes.

Total salt used is probably 1/4 t, but use your best judgement.
