I hosted my husband's uncle and cousin for Thanksgiving. His cousin is 22 yrs old and gluten and dairy free for 2 years. She had Enterolab testing, scoring 24 for gladin while off gluten and she had double DQ2 genes (0201 and 0202).
Anyway, her Dad accidentally fed her leftover non-GF stuffing we prepared, thinking it was the GF one. She ate at least a half cup. She said her typical reaction is brainfog, vomiting, tummy pain, D, etc. I immediately gave her 2 broad-spectrum digestive enzyme capsules and 2 DPP-IV enzyme capsules (equivalent to Glutenease, gluten cutter, etc. Mine was Vitacost brand) this was double the suggested dose for both enzymes.
She ended up with no appreciable reaction to the glutening episode, except for slight bloating! She was amazed. I imagine her youthful resilience may have helped, but we are all sold on this gluten enzyme concept now. I have no idea why or how it worked, but it did.

But I hope that doesn't entice her relax her vigilance against gluten in her diet. That's always a huge risk when someone discovers an "easy" way around a food reaction. The problem is that most people assume that if they don't have major clinical symptoms, there's no risk involved. That's not true. There's still some degree of inflammation that damages their intestines — it's just below the threshold that triggers a full reaction.
