I noticed your comment about spelt, in another thread. Please consider the facts carefully, before you ingest any of it.

Spent is an ancient subspecies of the same gemus of grasses that wheat belongs to. It has a different form of gluten, but it is close enough to wheat, that most people who are gluten intolerant, will react to it. Some of the folks selling it, make claims that some gluten sensitive individuals can tolerate spelt:

What an important reminder that foods labeled “wheat free” are not necessarily “gluten free”

In a gluten infused world I have to remind myself every day that an important part of dealing with my daily symptoms is paying attention to just those distinctions.
