Is nutritional yeast safe to use if you tested okay for yeast with Enterolab?
I found a recipe for Coconut Milk Cheddar cheese that I want to try. It calls for nutritional yeast to give it a more cheesy flavor, but I could leave it out.
I haven't found any commercial d-f, s-f cheese that I like, so when I found this recipe, I thought I'd try it. It's definitely less expensive than busying any more commercial fake cheeses.
What do you think about the yeast?

Once they reach stable remission, most members here don't seem to have any problems with yeast, even if they tested positive to the EnteroLab test while they were reacting. With a negative test result, I would think that you shouldn't have any risk of any problems at all with it.

I use nutritional yeast in a faux parmesan recipe, no problems (other than it's rather expensive) and it does give a nice, cheesy taste to it. Kind of reminds me of Kraft in the green foil cylinder.
Not to hijack this thread, but I used to buy Mimicream for cooking/ice cream. It used to be about $4 a pint I think, I'd get a 4 or 6 pack from Amazon. I ran out so checked and it had gone to $12 a pint, and now to $16 a pint. I checked at the Mimicream site and found that it has been discontinued for retail use. Don't know what that means exactly, maybe just selling to vegan manufacturer? Or maybe they priced themselves out of the market? Anyway, I soaked 1 C cashews overnight, rinsed and drained, put in blender with 2 C water, added 1/4 C hemp seeds, blended 3 minutes, and voila, Mimic-mimicream! It was great in chocolate ice cream done in the Cuisinart.

Beverly, I tried to find MimicCream looking for a non dairy, non soy, coffee creamer where I live around a year ago. When I checked at the local organic food market, the manager told me that they used to carry it, but stopped because of too many returns. According to him, and he apologized for his choice of words, many customers complained that it "looked like snot". So between the higher prices and poor customer appeal, it may have not been able to survive. Perhaps they have found a commercial use where its appearance doesn't matter....... I wonder what you thought about it?
I now make my own creamer with home-made almond milk that I make extra-thick, about 1/3 the amount of water for regular almond milk. I found a brand of flavor extracts that don't have any of my issues, and add hazelnut and chocolate flavor. It sure makes a yummy creamer. However, your recipe sounds a lot easier, as slipping the skins off of several cups of soaked almonds and straining/squeezing through several sizes of cloth is might tedious. I'll give it a try! Thanks!!

Hi Rosie, I liked Mimicream, but I didn't use it for coffee creamer, used it for ice cream and things like fettucine Alfredo. The price even at the cheaper level was pretty outrageous.
I used to make almond milk, really a pain to slip the skins, etc. I really like the hemp milk, I use 1/4 C for 3 cups of water, usually do it twice to get close to 2 L. I blend it 3 minutes, so doesn't take long. I think the hemp sellers want you to use twice that much but I think it tastes great this way, and SO easy. I use hemp milk for everything--made cornbread tonight, use it to make "cream" sauces, etc. Costco in our area carries hemp seed, and I've found it's very cost effective. And anytime you want it thicker just cut down the water.

The hemp seeds don't need to be soaked. I don't strain the end result, there is a small amount of debris in it, I just shake it well with each use. Doesn't bother me. If you wanted to strain it, it wouldn't give you much to discard. I really like it, had bought quarts of hemp milk when on sale, but still very expensive plus preservatives, gums, etc. So this is definitely my go to milk now, and so easy.
