How to "Overcook" Vegetables?

Post by nsaidcolitis »

This info I can't find on the web even If I did I wouldn't trust anything/anyone but this site .

But how do you overcook your vegetables for better digestion?

I was frying my zucchinis with coconut oil but maybe there is a better way to cook them entirely.

Frying might only cook the outsides.

How do you do it?

Also it seems I found a way to better tolerate rice...make rice cream and very gooey but i rather avoid rice. So maybe there's a trick for veggies you guys may know?

Just cook them longer until they're nice and soft -- don't overthink it.

If you can easily stab it with a fork or knife, like cutting through butter with a hot knife, you're in good shape!

What's the difference between juicing them and cooking them?

We need them cooked. Even Dr. Fuhrman ( he's a big juice proponent) recommends for people with IBD to cook their veggies even if you juice it needs to be cooked. I only eat zucchini and I peel it then cook it for 10 minutes in the microwave. I have a pretty powerful microwave. For a lower watt microwave I cook it 15 min. On the stove you may have to simmer for 30 min.

Pat,

Thanks for that information about juicing. I've always wondered about that.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

I have bags by Ziploc that are specifically for steaming.

Dr. Weil says they are safe:

Makes life so easy. I do green beans, zucchini, carrots in them quickly and easily.
