Good Morning!

I recently read about using green plantains as a thickener in cooking/baking. I think it was on the Paleo Mom website. I had never heard of this before, and of course, I am always on the lookout for substitutions for dairy/flour. Has anyone had any experience with this?

I haven't baked with green plantains yet, I've only made tostones. I eat plenty of ripe plantains. Here is a popular recipe for pizza dough or sandwich wraps made with green plantains:

I haven't experimented with them too much, but I've seen several recipes for pancakes, flat bread, crackers, etc. The Paleo Mom likes to use plantains, and I just found some other (non-paleo) ladies who do as well (http://www.purelytwins.com).

These are made with ripe plantains, but they're super simple and tasty! (Basically just mash up some plantains, add spices, cook like pancakes in coconut oil)

I also saw that The Paleo Mom had a plantain flour linked in her Amazon shop -- haven't heard much about that.

New for me! I don't think I can try it because last time I ate a banana it was a mistake. I tolerated them for a long time, and then had a reaction. I am going to wait for a long time to pass before I try them again.
