Thanks again, Leah, I have been eating mostly chicken, fish, rice, sweet potatoes. Haven't really tried too many other meats but maybe I will give it a try. Getting really tired of chicken and fish. Did u do baked potato without the skin? I will get some coconut oil and try that too.
I added potato after 6 months, but it seemed like I could have been eating it all along. I usually cut up the potatoes, toss with olive oil and salt and Pepper ( sometimes garlic salt and/or oregano) and roast them at 425 for about 25 minutes. If you use red or gold skinned potatoes, I find that I don't need to peel at all.
The coconut oil is really yummy on sweet potatoes and yams. I also roast WHITE sweet potatoes in coconut oil ( and I can now add chili powder) in the same fashion as white potatoes. It helps to use non-stick foil.
Try pork. It's so versatile. I buy the smallest loin I can. Then I make a paste of salt, olive oil, mustard, honey and rosemary. Spread it all over the loin ( after I poked holes in it) and cook it in the oven at 350 for about half an hour. Let it rest 10 minutes before slicing. It's so juicy.
I also buy ground lamb and make lamb burgers out of it. I always have frozen beef burgers in the freezer and cook them straight from the frozen state. Another protein I eat and is handy is nitrite free sausages ( either chicken or pork) When I open the package, I cook what I need and freeze the rest.
Well, there are some ideas. Remember, when you try something new, don't mix it with any other new food.
Tonight, I'm making "dirty rice" It has chicken livers and sausage in it :)
Let me know how it goes
