Food journals
Just diagnosed begining of March and I have been keeping a food journal since beginning of February. Also documenting the BMs. My question is if I have an explosive, 3 flusher BM accompanied by gas pains this afternoon, is it something I ate at lunch or breakfast, or yesterday? Just not sure how you are suppose to figure all this out.
It depends, because reaction times can vary depending on whether they are typical IgA-based reactions, or whether they are associated with mast cell reactions (IgE-based reactions). Most reactions associated with MC are IgA-based, and they typically occur between 3 and 12 hours after a meal. However, in some cases (depending on the food, and the individual), they can occur as long as a day or 2 later.
Mast cell reactions, by contrast, can occur within as little as 10 or 15 minutes after eating, and some of us tend to react even faster. In this scenario, it's more of an allergic reaction, than a typical intolerance reaction. We are all somewhat different, but we soon learn our reaction patterns, and keeping a food diary is the best way to figure out those patterns.
For example, if I eat avenin (the prolamin protein in oats that causes us to react) I will begin to have D almost exactly 3 hours after the meal.

As tex said, it depends... Pretty sucky hey!!!!
Take your time, eat some meals that are a bit bland and don't cause issues, and try the questionable ingredients one at a time.
When the gut is inflamed, reactions can be worse. Testing ingredients and interpreting the message that your body is giving gets easier over time.
Deep breathes, relax, the world of MC will be less foreign soon.
