Easter Dessert

Post by Marcia K »

Good morning. Just wanted to share that I made the crustless apple pie from the recipes posted on here. It was a big hit! My family always has so many desserts at holidays and I wanted to make something a little more healthy and that I would be able to eat as well. They all ate it over vanilla ice cream. I didn't have a problem with the sugar that is used in the recipe. Someone was asking me about my diagnosis and what I can eat....I told them about the wonderful online support group that I found. Have a great day, everyone!

Hi Marcia,

It's good to hear that the pie was a hit with the family. A lot of people believe that food suitable for such a restricted diet has to taste like unseasoned cardboard, but that's simply not true. Cooking is more of a challenge when we have food sensitivities, but it's also more rewarding. And the taste of success is much sweeter.

Thanks for posting that experience.

Woo hoo!! Good for you.

I make vanilla cake, choc brownies that are GF/SF/DF. I enhance them with coconut oil, cocoa butter etc.
people are a bit shocked that GF/SF/DF tastes soooo good.

Also, Use coconut sugar for a lot of my cooking, it is a bit less processed and is low gi

I hope there was leftovers of the pie for you!!

Exactly, Tex! I don't want people to feel sorry for me! At first it was overwhelming but the longer I am at it and the more research I do there are a lot of options for me. And I felt much better at the end of the day than I did after I ate those rich desserts before. There were leftovers, Gabes. It was even better the second time around!
