Do you think we've always been glutin and dairy (in my case) sensitive or does it start later in life when we get this?
I have never liked milk and ate only white cheese (rarely).

Good question. I have a hunch that some of us have had long-standing food sensitivities, but certainly not everyone. I can remember having tummy aches and constipation problems for as far back as my memory can reach. I sometimes wonder if these earlier symptoms might be limited to those of us who have a celiac gene.
It's apparent that untreated gluten sensitivity leads to other food sensitivities (by causing the leaky gut syndrome). According to Dr. Fine's research, when the genes that predispose to MC are triggered, the genes that predispose to gluten sensitivity are also triggered at the same time (unless they have already been triggered previously). And this is why most of us suddenly discover that foods that we have been eating for most of our life, now make us sick.

the thing to keep in perspective, the Gluten and Dairy are only 2 items causing inflammation....
there are BUCKET loads of ingredients, chemicals, enviro toxins, medications, illness/virus/bacteria, emotional events to name a few, that over our lives cause inflammation.
Something like MC is the volcano exploding, it has reached its limit.
there are genetics involved, and if family members have the genes/gene mutations, and they are interested in reducing the risk of the volcano exploding, then yes, adjusting diet and lifestyle will go a along way to minimise that.
(mindful it is not just about removing gluten and dairy from the diet, it is also being proactive about healthy eating and supplementation like Vit d3, magnesium etc)
I had already adopted a near gluten, lactose, yeast free eating plan, 9 years before my MC Dx.
(I say near as I was probably only doing it 90% of the time) and was having herbal tonics, regular acupuncture etc (during that time the main issues that came up were IBS, inflammation, liver and adrenal fatigue which I now know is all linked to my genetic mutations)
In my case I can pinpoint the main elements that have culminated in my current health issues, being, genetics; gestation and childhood medical history; IBS (mild inflammation) for most of my life; traumatic event during teenage years; travel to Papua New Guinea (bugs parasites etc) and taking lots of Doxycycline as a Malaria prophylactic
there is no group of tests that can identify ALL the elements that cause inflammation for the individual - the best asset is listening to your body.
anytime you have nasal congestion, mucus, histamine symptoms, discomfort or pain, fatigue etc - your body is sending the message!
