I made a loaf for dinner yesterday and it was VERY good. There is a video on the site showing exactly how to add the ingredients and the bread machine in the video is exactly like mine. I made this loaf with the eggs because I wanted to see how it was by the recipe before substitutions and I was also curious if I could handle small amounts of egg in a recipe. I ate 2 slices without a problem.

I love Pamela's GF bread mix, and order it by the case from Amazon. Since I've been trying to be a good girl and do away with eggs, which I'm sensitive to, I tried substituting a plantain the last time I made a loaf in my bread machine. Just stuck a plantain in my Ninja (with a tablespoon of the oil called for on the package) and blended it until it was a thick, sticky paste. Added it to the mix in the bread pan, along with the rest of the ingredients, and baked as usual. My bread machine doesn't have a GF cycle so I always use the "quick bake" setting. Though it didn't rise quite as high as when using eggs, it was SO delicious! The plantain added just the slightest touch of sweetness to the bread, and it was moist and yummy!
Next time I may add just a bit of baking powder to the mix to see if it will help it to rise better….
I've dramatically cut down on my grain and starch consumption, but a decent loaf of bread is one of the few little "luxuries" left in my diet.
