You guys,
You can't imagine how much I used to love angel food cake. I haven't eaten it in over four years. Yesterday, in Whole Foods, in the GF freezer, next to the produce dept., there it was, under the WF brand, and it didn't weigh half a ton when I picked it up. I had to put it in my cart. It is seriously good. I have largely been avoiding GF baked goods, but this could be trouble for me....

Oh, how I love and miss angel food cake!!
But until they figure out a way to make it without all those eggs, I'll have to wait until I'm singing with the angels in heaven before I can have another piece…….

Hurray Suze! Angle food cake is heavenly! It's such a joy to find a new food. I ate a tomatoe this summer, a beefsteak from the farmer's market. I blanched it to remove the skin, then I took out the seeds, and sliced it. It was the best toasted tomatoe sandwich I ever savored. I relished every morsel. It was a lot of work but worth it. I sent up a prayer of thanks.

I would recommend this cake for those who can eat it. It's not a light, airy cake like some, but not heavy either. Most important, it did not taste mealy to me. I really enjoyed it with fruit, with a cup of coffee, etc. Some fresh raspberries, and a little Chambord, maybe a little DF ice cream, YUM. 1/6 of the cake is 130 calories, according to the label, but I would never eat that much at a sitting.

My friendship with coffee is becoming ever more tenuous. Raspberries are dicey, and I am finding out this summer that peaches (my #1 true fruit love) and cantaloupe are either on their way out or I am going to have to resign myself to suffer the short term consequences. Lots of un-digested fruit visible lately.
I think I'm doing lots of bargaining with myself about what I'm willing to tolerate...there's only so much I'm willing to give up.

I understand that completely. I can eat three strawberries and be fine… a few raspberries perhaps…. a few bites of peach at a time is OK. Blueberrries seem to work best. ANY MELON is OUT! I keep experimenting and in the process am finding answers ( not always the ones I want). I do however, risk certain foods sometimes knowing full well that my BM the next morning will probably be loose. As long as that is as far as it goes, I'm willing to take those risks sometimes. It's a balancing act and as time goes on, I get better at it. If I ate perfectly al the time, I'm pretty sure I'd be in full remission, but life is so much more enjoyable for me this way. We all have to make our own decisions.
