Yay! A visit from Norman...

Yay! A visit from Norman...
Oh happy day!
Norman has been a frequent visitor this week; I've invited him to stick around permanently since he is such a welcome change from the previous "guest"! And eureka -- a perfect "4" on the chart!
It took the Enterolab test (C-1) and a modified autoimmune Paleo protocol to roll out the welcome mat for him, but he seemed to appreciate all the effort. Now if I can just keep from doing something stupid that ticks him off and makes him leave…. I am cooking all of his favorite meals in an effort to keep him happy, and so far, so good.
In the meantime --- happy dance!

I greatly limited my 1+ foods --- there were only two of them (pork and white potatoes), so we have those maybe once a week. The 2+ list was pretty long; rice and beef were the two that were hardest to eliminate, but I'm substituting lamb, bison, and occasionally salmon for the beef. Chicken and oats were 3+, and though I really miss the chicken, I'm learning to use turkey and cornish hens instead. With some help from an autoimmune Paleo cookbook, we are managing to dine like a king and queen here, and not suffering in the least when it comes to menu choices.
I've even been able to eat raw fruits and vegetables, and have a salad now and then without dire consequences. Still not sure about coconut, though, and so many Paleo recipes use coconut in various forms to take the place of grain products that I haven't really been able to expand the menu as much as I'd like. Baby steps…. And since I've discovered that plantains make a great substitute for eggs in a lot of recipes, I've been able to add back in a few old favorites. Still take an antihistamine once a day, and Histame before any high histamine foods, but otherwise, no meds at all.
I'm looking forward to e-mailing my GI doc next week, one month post visit, and telling him that IT WAS DIET CHANGES THAT WORKED, NOT THE COLESTIPOL YOU PRESCRIBED! …..
