Tailgating with LC

Good morning. I wanted to share my tailgating experience. A friend asked me to go along to her daughter's college field hockey game which was being played at the college my son attends. She told me that we would tailgate afterwards. I told her that I would take my own food to which she replied that the coach wants healthy choices so I will walk the food line with her. She means well, but there was no way I was taking a chance on anything that was on the food tables. It was a long day so I packed my own lunch & dinner. As I looked at the food tables, there really was not one thing that I could eat. As I sat there eating a peeled apple that I took along (I am OK with apples) I really didn't feel badly that I couldn't eat anything. I realized that I now have a totally different mindset because as I watched them eating rolls and other gluten-filled items the word "poison" crossed my mind. The only thing I really missed was the strawberry trifle that my friend made (pudding, Coolwhip, strawberries.) That looked very good and was one of the first things to go. I saved my dinner for the ride home -- a turkey breast cutlet that I cooked in coconut oil and a baked sweet potato. Even though it was cold it was very good. To anyone starting on this journey, this month is the one year anniversary of my diagnosis and life is starting to feel more "normal." It takes more preparation, but so worth it in the end. And of course the highlight of my day was seeing my son! :grin:

Glad you enjoyed your day Marcia! My mindset about food has changed completely as well and although I still get some cravings when I smell fresh pizza or bakery smells, it passes and I move on!

Congrats! It amazes me how little I miss my old diet. It took a couple of years but I'm so committed to this modified paleo diet, I rarely deviate. It took three solid years to get well and I don't want to mess it up and get sick again. CC and LC are just so awful, the thought of going through that misery again trumps any passing desire for forbidden food.
