Hi All,

I never thought I'd see the day, but look at this — a doctor who doesn't condemn following a GF diet without a celiac diagnosis.
Dr. Rick deShazo, professor of medicine and pediatrics at the University of Mississippi Medical Center, said individuals need to look at the calories consumed, no matter what diet they try.

“I don’t see any downside to (avoiding wheat) as long as they are eating a balanced diet with protein and good carbs like squash and sweet potatoes,” he said, noting whole grains contain less calories than refined carbs in wheat or white breads.

The catch to consuming gluten-free products is it’s difficult to see what type of ingredients substitute the gluten, so read nutrition labels carefully.

“Processed food is the problem; the solution is whole foods,” deShazo said.

“If you think you’re gluten sensitive, eat whole foods and go from there.”

I especially like this part of his comments:
