Shrimp Cauliflower Pancakes

Shrimp Cauliflower Pancakes

Serving size: 2-4 pancakes
Ingredients for Pancakes:
1 oz. shrimp
1 tbs ghee (or coconut oil, or grapeseed oil)
2 tbs lemon juice
4 crushed garlic cloves
½ onion
1 chopped cauliflower
a dash of pepper
a dash of mineral salt
3 eggs
1 tbs goat cheese (optional)
a sprinkle of sesame seeds

Directions for the pancakes:
Chop up the cauliflower into large cloves and put in the food processor.
Chop up the onion, and crush the garlic.
Chop up the shrimp into small pieces.
Prepare your pan with 1 tbs of ghee (or coconut or grapeseed oil).
Mix the shrimp, onion, cauliflower, eggs, lemon juice, a dash of mineral salts and pepper.
Measure out enough of the mixture to make a pancake and let the pancake cook on the pan until it is crispy and ready to flip. Flip the pancake once it is ready, and continue making pancakes until the batter is finished.
Place the pancakes next to your salad. Sprinkle the pancakes with some sesame seeds, and for an optional garnish, place a dash of goat cheese on top.
